Tuscan Tuna Salad
Salad:
  • 1 can (16 oz) White Beans, drained and rinsed
  • 1 can (16 oz) Green Beans, drained and rinsed
  • 1 can (6 oz) Water Packed Tuna, drained
  • 2 tablespoons Onion, chopped
  • 1/4 cup Ripe Olives, chopped (*optional)
Combine Ingredients and chill for at least one hour.

Dressing:
  • 2 tablespoons Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Mustard
  • 1 clove Garlic, minced
  • Salt and Pepper to taste
Put salad dressing ingredients in a small jar, cover tightly and shake. Add to chilled salad and serve. Makes 4 small main dish servings.


Egg Fried Rice
  • 1 cup Uncooked Long-Grain Rice
  • 1 can Mixed Veggies
  • 2 Eggs
  • 1-2 tablespoons Oil (Canola OR Olive oil) plus additional to taste
Put rice and two cups of water in saucepan over medium heat. Open can of mixed veggies, drain and lightly rinse. Place veggies in with the rice. Turn heat to low, simmer with the cover on. Meanwhile heat one TBSP oil in large frying pan, add eggs, scramble. Add additional TBSP of oil and heat for a minute, and then add cooked rice and veggie mix to pan. Stir everything up to mix in cooked egg. Fry, stirring occasionally, for seven minutes. Serve hot.


Taco Lasagna
  • 1 Package Tortilla Shells
  • 1 lb. Ground Hamburger
  • 2 cups Shredded Cheese
  • Taco Seasoning
  • 1 cup Salsa
Cook ground beef and drain. Combine it with taco seasoning and salsa. Layer tortilla shells, ground beef 2 -3 times and top with cheese. Bake at 350 degrees for 25 minutes.


Chicken Casserole
  • 2 cans Chicken, drained
  • 1 can Cream of Chicken Casserole
  • 1 cup Sour Cream
  • 1 sleeve Ritz Crackers
Combine first three ingredients. Pour into 9" x 13" casserole dish. Crush Ritz crackers and sprinkle over top. Bake at 350 for 30 minutes.


Tuna Casserole
  • 1 package Egg Noodles (or 3 cups Macaroni Noodles)
  • 1 can Cream of Chicken Soup
  • 1 can Tuna, drained
  • 1 can Green Peas (optional)
  • 1 cup Shredded Cheese
  • 1 cup Crushed Potato Chips (OR Crackers OR French Fried Onions)
In a 9" x 13" baking dish, combine the macaroni, tuna, and soup Pease if included). Mix well, and then top with cheese. Bake at 350 degrees for about 25 minutes, or until bubbly. Sprinkle with potato chips/crackers/french fried onions (choose one), and bake for another 5 minutes. Serve hot.
